Breakfast or lunch in winter- Mandua ki roti or simple wheat roti with green vegetables or any kind of available vegetable. But this one is traditional.
Mudua Ki Roti
Lunch -Summer days- In the hilly regions, people use Dal -Chawal (rise-pulse) in the afternoon time. But in the winter season, they eat it in the morning time. Lunch and breakfast are interchangeable according to season.
In pulses “Gahat ki Dal” is traditional. Chainsu ,Faanu are the name of pulse dishes.
In other dishes-
Kafuli -(a dish made by yogurt and Jhungora)
Thechwani-Key point of this vegetable recipe Potato or spherical shaped radish(Turnip) is broken into pieces on grinding stone. Then the usual method is used.
Aalu ke Gutake
After hard work in fields and woods (July- October) life of a uttarakhandi is incomplete without this
Dinner- Dinner is simple with vegetables, chappati, and some sweet dish
In Sweet Dishes
Porridge– made of wheat flour or Semolina.
Jhungora ki kheer
In traditional ceremonies and on occasions of ritual
Gahat Ke pakore
Aalu (potato) ke pakore or (onion)
In wedding ceremonies – Sweet dish – Arsa & Laddu
As a snacks – Jalebi and Samose.
( If you are attending to fairs in Pahaar(hills) then if you have not Jalebi your fair trip was useless)
In other sweet dishes – Baalmithai –
